You will need:
1/2 cup apricot preserves
2 T soy sauce
1 t sherry
1 t veg oil
1 t cornstarch
1/2 t garlic
1/4 t ground ginger
1 cup chopped bell pepper
3 chicken breasts cut into strips
Mix all ingredients together and bake at 350 for on hour. Garnish with cashew nuts and serve over rice.
