Stuffed Shells



STUFFED SHELLS 1/2 lb. shells for stuffing 3/4 jar spaghetti sauce FILLING: 1 (24 oz.) ricotta cheese 1/4 lb. shredded mozzarella cheese 1 tbsp. chopped parsley 1 egg 1/4 c. grated Parmesan 1/2 tsp. basil Salt & pepper to taste Prepare shells as directed on package. Blend all filling ingredients together and spoon into each shell, arrange shells in an 8 x 11 inch baking pan. Cover with spaghetti sauce and sprinkle with Parmesan or mozz. Bake in preheated oven at 350 degrees for 20-25 minutes.

Voeller Dressing

This salad dressing comes from the "Two Sisters" cookbook:
1 cup olive oil
3 T dijon or yellow mustard
2T Braggs liquid amino, tamari, or soy sauce
2T honey
2T lemon juice
1T thyme
1/2 t pepper

Shrimp Noodle Soup

Boil 8 cups of water.
Add and boil the following for 5 min:
2 (only 2! not all 4) packets of chicken top ramen seasoning
2 T soy sauce
1 carrot, thinly chopped
3 green onions chopped
2T minced garlic
2T grated ginger
1T thai hot chili sauce (I omitted this and it was stil good)
After 5 min, add and boil the following for another 5 min:
4 packets ramen noodles
1 cup sliced mushrooms
1 cup baby spinach
1 lb cooked shrimp
Add a spritz of lime juice, stir, and serve!
This one would be good with any variety of veggies: baby corns, sliced celery, red pepper etc.

S'more bars

These were oh, so good. Next time I would add the step of sticking the tray under the broiler at the very end to toast the marshmallows a bit.

14 graham crackers
2 cubes butter
1 cup brown sugar
Chocolate chips
Mini-marshmallows

Break the graham crackers into squares and spread onto a cookie sheet.
Melt the butter and sugar together and boil 5 minutes, stirring constantly.
Pour evenly over the crackers.
Bake at 350 for 10 minutes.
Sprinkle with chocolate chips and then marshmallows.
Put under the broiler for a few minutes, for the marshmallows to toast.
Let cool about 10 minutes in the fridge, and then cut into bars (along the graham squares) before it gets hard.

Bread Pizza, aka Poor Man's Pizza


Grease baking sheets.
Spread out slices of bread on sheets.
Cover each slice with spaghetti sauce, shredded mozzarella, and whatever pizza toppings you want.
Bake at 450 for only 10 min. Cheap and yummy!

Chicken Hash Brown Casserole


Spray a baking pan. Then layer from the bottom up:
frozen hashbrowns
cubed, cooked chicken
soup mixture: 1 can cream of chicken, 1/2 cup half-n-half or cream, 2 T onion flakes, dash of salt/pepper
Top with crushed corn flakes
Bake at 350 for 45 min

Applesauce cake



I came across this recipe some time ago, and it is a keeper. It is, as Zachary likes to say, "Easy-peasy-lemon-squeezy!" It is a super moist cake, and when you slice it you get a fun ribbon of cinnamon sugar.


1 box yellow cake mix (Or homemade substitute)
2 cups applesauce
3 eggs
cinnamon sugar



Spray a bundt pan. 
Sprinkle cinnamon sugar all over the edges of the pan. 
Mix together the cake mix, applesauce and eggs.
Put half the batter in the pan.
Sprinkle more cinnamon sugar over the batter, trying to keep away from the edges.
Spread the rest of the batter on top.
Bake at 375 for 40-45 minutes.

Cheesy Chicken Spaghetti

1 lb spaghetti
1 lb cooked chicken pieces
1 can mushrooms (optional)
1 T worchester sauce
8 oz evaporated milk
1 can cream of chicken
1 lb velveta

Cook pasta and set aside. Cube velveta and melt in microwave. Pour in other sauce ingredients and heat again, stirring will. Toss with pasta and chicken.
Another Duggar Family favorite!

Mexican Bow Tie Pasta with Chicken

1 lb bow tie pasta
1-2 lbs chicken, diced
2 T butter
2 cloves minced garlic
1/4 cup flour
1/2 cup milk
1 cup chicken broth
1 cup salsa
8 oz cream cheese
I added a can of diced tomatoes too.

Cook pasta and set aside.
Cook chicken in butter until done. Add garlic. Stir in flour, then gradually pour in milk and broth stirring constantly. Add salsa and cream cheese. Cook until thick and bubbly. Toss with pasta and tomatoes.

Coq Au Vin

In a bowl, mix together:
1 cup dry red wine
1 can golden mushroom soup
1/4 cup cornstarch

In a slow cooker, place 2 lbs chicken, 1/2 onion sliced, 1 can mushrooms, dash of rosemary.
Pour sauce over the top and cook on low for 7-8 hours.
