Pizza Cookies


The kids and I made this recipe for pizza cookies today. I'm sure any sugar cooking and frosting recipe would work, but we used the one from the Better Homes and Gardens cookbook

Dough:
1/3 cup butter or margerine
1/3 cup shortening
3/4 cup sugar
1 tsp baking powder
dash of salt
1 egg
1 tsp vanilla
2 cups flour

Beat butter and shortening on medium speed for 30 seconds. Add sugar, baking powder and salt. Beat until combined. Beat in egg and vanilla. Mix in flour. Spread onto a pizza pan, making a 12" circle. Don't make it thinner around the edges (as I did) or it will get too crispy.

Bake at 375 degrees for 18 minutes. Let cool and frost and decorate.

Frosting: (Only needed about half, though)
1/3 cup butter
4 1/2 cups powdered sugar
1/4 cup milk
1 1/2 tsp vanilla
food coloring

Beat butter until fluffy. Gradually add 2 cups of the powdered sugar, beating well. Slowly add the milk and vanilla. Slowly beat in remaining sugar. Add more milk, if needed, to get desired texture. Tint with food coloring.

Use a pizza cutter to slice into wedges.
